Ingredients:

  • 1/2 cup ice cubes
  • 1/4 cup lemon juice
  • 1/4 cup orange juice
  • 4 tsp sugar
  • 1 tsp minced fresh mint , optional
  • 6 popsicle molds or paper cups (3 oz each) and popsicle sticks

Directions:

  1. In a blender, combine the first six ingredients; stir in mint if desired. Fill each mold or cup with 1/4 cup apricot mixture; top with holders or insert sticks into cups. Freeze. Yield: 6 servings.
