Lefse Or Flat Potato Bread

Ingredients:

  • 6 - 7 medium baking idaho potatoes - i like using russet as well
  • 1 tsp salt
  • 4 - 5 tbsps. salted butter
  • 1 tsp sugar

Directions:

  1. Peel and boil the potatoes.
  2. Do not overboil.
  3. Mash or rice the potatoes and add the salt, butter and milk while still hot.
  4. Allow to cool and add enough flour so they are easy to roll out.
  5. Use a well-floured counter top, board or pastry cloth and roll out a large spoonful of the dough as thin as possible - thinner than pie crust.
  6. Cut into a 6 or 8 inch circle.
  7. You could use a sharp-edged saucepan lid as a cookie cutter.
  8. Fry on a medium/warm ungreased griddle.
  9. Only fry until lightly browned on both sides.
  10. Keep Lefse bread soft between several slightly dampened towels until ready to serve.
  11. These can also be eaten dry and crisp, but most of us prefer them soft and spread with butter and honey, preserves or brown / white sugar.
  12. If you wish to spread something on them, then they are rolled or folded to serve.
  13. If you serve them with a meal, butter is usually the choice.
  14. Serves 12 - 14 depending on the size you make.
