  1. SOUR CREAM PASTRY: Combine flour, sugar and salt in a medium bowl. Cut in shortening with pastry blender or two knifes untl mixture resembles corase crumbs. Add sour cream mixing with a fork until particles are moistened and cling together. Form dough into a ball.
  2. Roll on a lightly floured board or pastry cloth to a circle at least 2-inches larger than an inverted 9-inch pie plate. Fit into pie plate. Trim edges of dough leaving a 3/4 inch overhang. Fold edge under. Flute dough as desired.
  3. FOR THE FILLING: In a medium mixing bowl, combine sugar, flour, salt, cinnamon, applesauce, butter flavored Crisco, and eggs. Blend thoroughly with wire whisk. Pour into prepared pastry.
  4. Bake at 425F for 10 minutes. Reduce oven temperature or 350°F Bake for 20-30 minutes longer, or until center is set. Cool completely. Top with whipped cream, if desired.
