Directions:

  1. Bring chicken stock and lentils to a boil in a large (8-10 quart) sauce pan, over high heat. then reduce to med-low heat add other veggies, cover, and simmer for 20 minutes
  2. At the same time, heat olive oil in a skillet over med heat. stir in garlic and onion and cook until onions are soft and translucent (5min)
  3. Stir in onions into lentils and add cumin. continue simmering until lentils are tender, about 10 minutes.
  4. Stir in lemon juice and cilantro before serving.
