Ingredients:

  • 1 1/2 cup bran flakes
  • 1/2 cup pumpkin
  • 1 tsp. oil
  • 1 egg
  • 2/3 cup brown sugar
  • 1/2 tsp. vanilla
  • 1 cup flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 tsp. cinnamon
  • 3/4 tsp. ginger
  • 1/2 tsp. nutmeg
  • 2 tsp. honey

Directions:

  1. Preheat oven to 350 degrees. Line a muffin tin with 12 baking cup liners. In large bowl, combine bran flakes, buttermilk, pumpkin, oil, egg, brown sugar and vanilla. Stir together well and allow mixture to sit for 10 minutes. In another bowl, sift together the flour, baking soda, baking powder and salt. Gently fold into wet ingredients and mix until just combined. Using a large ice cream scoop, evenly distribute batter among the 12 muffin cups. Bake 350 degrees for 18-20 minutes. Remove from oven and drizzle tops evenly with honey.
