Krystal's Spinach Enchiladas

Ingredients:

Directions:

  1. Chop onion and saute this with your spinach, mushrooms, green chili's.
  2. While this is being done, fry your bacon.
  3. Then add bacon to your sauted mixture.
  4. Now start preparing your tortilla's by adding first your cheese, followed by a couple spoonfuls of your sauted mixture.
  5. When done with rolling tortilla's, it is now time to make your white sauce topping.
  6. Take a small sauce pan add your butter.
  7. Then add your flour, stir until all lumps are gone.
  8. Now add your milk.
  9. Stir until thick consistency.
  10. Pour and cover enchiladas.
  11. Top with cheddar cheese.
  12. Bake about 35 minutes.
  13. Longer depending on oven.
  14. This is a great dish.
  15. It is perfect for vegetarians, just exclude the bacon.
