Ingredients:

  • 6 medium tomatoes
  • 1 small onion
  • 4 cloves of fresh garlic
  • 1 medium lime
  • salt and pepper to taste

Directions:

  1. Place onion, garlic, jalapeno, lime, salt and pepper into food processor (or blender) and blend until paste like.
  2. Chop tomatoes into small pieces (if pieces are too large you will have to blend them longer and your salsa will be runny) and add them into the food processor and pulse a few times to desired consistency.
  3. Serve chilled. If you make it in advance the flavors will be enhanced after sitting together over night.
  4. Adding fruit like mangoes, peaches, pineapple, kiwi, strawberries or anything you can think of adds a lot of sweet complexity to your salsa, which really goes great with the spicy.
