Jurgita's Muffins with Chocolate Banana Filling

Ingredients:

Directions:

  1. Mix flour, wheat bran, wheat germ, baking soda, spices, and salt in one bowl.
  2. In another bowl, mix flax+3T water. Then add yogurt, sugar, and 1/2 cup water. Mix well.
  3. Pour dry ingredients into wet ingredients gradually, mixing gently.
  4. Add grated apples and orange zest to the batter.
  5. Make a filling: mash fresh (or defrosted) bananas with fork, add cocoa powder.
  6. Spray with oil your muffin pan (if needed) or use paper liners.
  7. Spoon 1 layer of the batter + add filling + 1 layer of the batter on top, do this for for each muffin hole. If you have any remaining banana mix left, put a dot on top of each muffin. :-)
  8. Bake at 375F for about 25- 35 minutes, depending on how moist/wet you like them. No worries about under baking- no eggs here! :-)
