Jicama Shrimp And Mango Salad

Ingredients:

Directions:

  1. In large skillet bring water and 3/4 teaspoon of the salt to a boil.
  2. Add shrimp then cover and bring back to a boil.
  3. Cook covered over moderate heat for 1 minute then stir well.
  4. Continue cooking for 2 minutes then drain well.
  5. When shrimp are cool cut each one in half lengthwise and then in half crosswise.
  6. Put shrimp in a large bowl and add the jicama, mango and cilantro.
  7. In a small bowl whisk together lemon juice, mustard, remaining salt and pepper.
  8. Add oil slowly while whisking.
  9. Just before serving add vinaigrette to shrimp mixture and toss.
