Ingredients:

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup shortening
  • 1 egg
  • 1 tsp vanilla
  • 16 oz fruit jam

Directions:

  1. Sift together the flour,sugar,baking powder and salt and place in a medium size bowl.Add the shortening and blend well,using a fork.Add the egg and vanilla and continue mixing with a fork.Place 1/2 the mixture in a 8 greased pan,patting to cover the bottom of pan and a little up the sides.Spread jam over the dough and dot with the rest of the mixture.Bake 25 minutes or until nicely browned at 375 oven.Cool on rack and cut when completely cooled.
