Italian Chicken Au Gratin

Ingredients:

Directions:

  1. In a large ovenproof pan, saute onion and garlic in olive oil on medium heat until tender.
  2. Add chicken pieces and stir occasionally until nearly cooked through.
  3. Add tomtaoes, beans, chicken broth, and seasonings. Cook, stirring occasionally, until chicken is cooked through.
  4. Add frozen spinach, cover dish and continue cooking on medium heat until spinach is hot.
  5. Let simmer for 5 minutes.
  6. Sprinkle with shredded mozzarella and place under broiler until cheese is melted, bubbly, and lightly browned, about 5 minutes.
