Ingredients:

  • 1- lb of ricotta
  • 2 oz of cream cheese
  • 1 tbsp of vanilla
  • 1 4 cup or more to taste of chocolate bits ( the mini 1''s )
  • a tsp of brandy flavoring
  • the day before mix the above ingredients, refrigerate over night.- to set.
  • 1 and 2 3 rd''s cup of flour
  • 2 tbsp of sugar
  • 1 tsp of cinnamon
  • 1 tbsp of butter
  • 1 egg beaten with 3 oz of white wine

Directions:

  1. MIX ABOVE INGREDIENTS IN A BOWL, MAKE A WELL AND ADD 1 EGG BEATEN WITH 3 OZ OF WHITE WINE
  2. KNEAD DOUGH INTO A BALL AND REFRIGERATE FOR 2 OR 3 HOURS, ROLL DOUGH OUT IN TO A RETANGLE, CUT INTO 4 INCH SQUARES , WRAP AROUND CANNOLI TUBES SEAL WITH EGG WHITE, AND DEEP FRY CAN BE MADE 2 DAYS AHEAD OF TIME. ( IF YOU WANT TO MAKE HALF CHOCOLATE FILLING ,-TAKE HALF OF WHITE FILLING RECIPE AND ADD 1OR 2
  3. TBSP OF COCOA, AND 1 0R 2 TBSP OF CONFECTIONARY SUGAR.
