Insane Banana Nut Bread

Ingredients:

Directions:

  1. Sift the flour, salt, baking soda, and baking powder into a large bowl.
  2. In a separate bowl, cream the butter, white sugar, and brown sugar.
  3. Add eggs, one at a time, mixing after each addition.
  4. Mix in mashed bananas and vanilla.
  5. Mix dry ingredients into wet ingredients in 3 batches.
  6. Stir just until blended.
  7. Stir in nuts.
  8. Pour into two greased and floured 9 x 5 inch loaf pans.
  9. Top with cinnamon-sugar mixture (optional).
  10. Bake at 350 degrees Fahrenheit for 55 to 60 minutes or until knife inserted into the middle comes out clean.
  11. Cool loaves in pans on wire rack for 5 to 10 minutes.
  12. Turn out onto a cooling rack; cool completely.
  13. Wrap in aluminum foil when cool.
  14. Refrigerate the loaves for 2 hours or more before serving.
