Ingredients:

  • 2 cups flour
  • 1-1/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1/4 cup sugar
  • 2 eggs , unbeaten
  • 1 tsp vanilla
  • 1/2 cup melted butter
  • 2 cups buttermilk (or 2 cups milk with 2 tsp vinegar or lemon. let it sit about 10 minutes before using)

Directions:

  1. Mix Dry ingredients thoroughly.
  2. Add remaining ingredients and stir lightly just to moisten dry mixture.
  3. Mixture will be thick and lumpy.
  4. I use 1/4 cup per pancake. You may have to spread mixture with the back of a spoon.
  5. Turn cakes when top is bubbly.
