Ingredients:

Directions:

  1. In a large nonstick frying pan put the oil and heat over medium-high heat.
  2. When the oil is hot, add the zucchini and stir-fry.
  3. A spatula works well to turn over the zucchini.
  4. Once the zucchini is tender and some pieces have brown spots, sprinkle with salt, pepper and garlic powder, and then add the marinara sauce.
  5. The marinara sauce can be homemade or store-bought.
  6. Heat until the sauce is hot.
  7. Remove from heat, but keep the sauce warm.
  8. Take sweet submarine sandwich rolls and split them.
  9. Butter each side and put garlic powder on one half and Parmesan cheese on the other half.
  10. Place on a baking sheet and broil the rolls until lightly toasted.
  11. Remove the bread from the oven and place on plates.
  12. Put some of the zucchini mixture on the bottom half of a roll.
  13. Sprinkle with mozzarella cheese and top with the remaining piece of bread.
