Ingredients:

Directions:

  1. Preheat oven to 350°F.
  2. Pierce sweet potatoes all over with fork.
  3. Place potatoes on rimmed baking sheet.
  4. Roast until potatoes are very soft, about 1 hour 45 minutes.
  5. Remove potatoes from oven and let stand until cool enough to handle. Peel potatoes and place flesh in mixing bowl; add butter.
  6. Using electric mixer, beat until mixture is fluffy and smooth.
  7. Mix in 2 tablespoons honey.
  8. Season to taste with salt and pepper and more honey by teaspoonfuls, if desired.
  9. Transfer sweet potatoes to serving bowl.
  10. Garnish with Parsley
