Ingredients:

Directions:

  1. Put cereal in milk, set for 5 minutes.
  2. In a large bowl, stir together flour, sugar, baking soda and powder.
  3. In a small bowl, stir together milk/cereal mixture, egg whites, honey, prunes, molasses, vanilla, and soy milk. Add prune mixture to the flour mixture and stir until moistened. Fold in the raisins.
  4. To bake, preheat oven to 375F . Spray muffin pan with non stick spray. Spoon the batter into the prepared cups, filling each 3/4 full. Bake for 15-18 minutes.
  5. Remove muffins after letting cool in pan for 5 minutes.
