  1. 1. The night before baking the waffles, soak the whole-wheat flour in the skim milk, splenda, honey (1 tablespoon), vanilla extract, orange juice mix. Cover and leave at room temperature overnight. This is a hugely important part of the recipe. This pre-fermentation process assists in creating a superior waffle. It allows for more flavor to be teased out of the complex wheat molecule. The type of pre-fermentation being used here is called soaking. The purpose is to activate the enzymes in the grains in order to break out some of the trapped sugars from the starches. It also softens the grain. While there is little to no real fermentation taking place in a soaker, its effect in the final product will be dramatic.
  2. 2. The next day, preheat the waffle maker.
  3. 3. In a separate bowl from your mixture from the night before, separate your egg whites from the yokes. Beat the eggs until stiff peaks form - just like margarine. Add one tablespoon cornstarch to margarine and one tablespoon orange juice. This will help stabilize it.
  4. 4. Once the margarine is complete, add the rest of the needed ingredients to the mixture made the night before including the final 1 tablespoon of honey. Mix VERY well, leaving no lumps. If it is too lumpy, add a bit of orange juice at a time until the mixture is the proper consistency (slightly thicker than pancake batter).
  5. 5. Gently fold in the egg white mixture into the batter.
  6. 6. Begin placing the batter into the waffle maker, cooking until golden brown.
