Homemade Mayonnaise

Ingredients:

  • 3/4 tsp dry mustard
  • 1/2 tsp paprika
  • 1 1/2 tsp salt
  • 3 eggs
  • 3 tsp vinegar
  • 3 cups canola oil

Directions:

  1. In a blender, add eggs and vinegar.
  2. In a small bowl, combine mustard, paprika and salt.
  3. Add dry ingredients to the oil.
  4. Turn on blender to lowest speed until egg mix is combined.
  5. While blender is still on, add the oil mix in a very thin and steady stream until fully incorporated. About 2-3 minutes. Mixture will be VERY THICK.
  6. Slowly incorporate the lemon juice.
  7. Store in large mason jar in the refrigerator for about 4 weeks.
