High Fiber Easy Oat Muffins

Ingredients:

  • 3 cups oat bran
  • 3 cups water
  • 1 1/2 tsp baking powder
  • 1 tsp cinnamon
  • 3 oz prunes
  • 1/2 cup pecans

Directions:

  1. Preheat over to 400°F.
  2. Grease muffin pans or use silicon muffin pans.
  3. Pour water over oat bran and soak for five minutes.
  4. Chops fruit and nuts into small pieces.
  5. Add fruit, nuts, and remaining ingredients to the oat bran and mix well.
  6. Fill cups and bake approximately 18 minutes.
