Ingredients:

Directions:

  1. Mince the mixed herbs.
  2. Crumble the feta cheese into a small bowl then drizzle with 2 tablespoons of the olive oil.
  3. Stir in the minced herbs until thoroughly incorporated then set aside.
  4. Heat the remaining 1 tablespoon olive oil in a large heavy skillet over medium high heat.
  5. When oil is hot but not smoking add squash and cook stirring constantly for 4 minutes.
  6. Add beans and toss to mix.
  7. Cook stirring constantly for 5 minutes.
  8. Add tomatoes and cook stirring constantly until squash is translucent about 5 minutes.
  9. Season with salt and pepper then remove from heat.
  10. Mince dill and add it to the vegetables mixing well so it is evenly distributed.
  11. Transfer vegetables to warm serving platter then distribute the feta on top and serve immediately.
