Henderson Family Chocolate Cake

Ingredients:

  • 2/3 cup sugar
  • 2 eggs
  • 1 cup self-rising flour , sifted
  • 2 tbsp unsweetened cocoa , sifted
  • 1/4 cup confectioners' sugar , sifted
  • 2 tbsp butter
  • 3 1/2 oz white chocolate

Directions:

  1. Lightly grease two shallow 7-inch cake pans.
  2. Place all the ingredients for the cake in a large mixing bowl and beat to form a smooth mixture.
  3. Divide the mixture between the two pans and level them off.
  4. Bake in a preheated oven at 325°F for 20 minutes or until it's springy.
  5. Cool for a few minutes and then transfer them to a wire rack to cool completely.
  6. To make filling beat the confectioners' sugar and butter together in a bowl until light and fluffy.
  7. Melt the chocolate and beat half into the frosting mixture.
  8. Use the filling to sandwich the cakes together.
  9. Spread the remaining melted cooking chocolate over the top of the cake.
  10. Pipe circles of contrasting melted milk or white chocolate and feather into the chocolate with a toothpick.
  11. Let it set before serving.
