Heavenly Southern Hot Rolls Easy

Ingredients:

  • 2 sticks unsalted butter
  • 2 tsp salt
  • 2-1/2 packages yeast
  • 1 cup warm water
  • 2 eggs
  • 6 cups flour

Directions:

  1. In large bowl pour boiling water over butter, sugar, salt
  2. Dissolve yeast into WARM water
  3. Beat eggs slightly, mix with yeast, warm water
  4. Add this to cooled butter mixture
  5. Add flour, several cups at a time, mix well ( I mix by hand, using large wooden spoon)
  6. As you mix, dough will easily shrink from sides of bowl
  7. Can leave in same bowl, OR place dough in another greased bowl
  8. Cover and refrigerate over night OR for at least 4 hours
  9. Remove from refrigerator 2-3 hours before serving
  10. Turn dough onto floured board* or surface, gently knead for just a few seconds until smooth
  11. Use rolling pin, roll to desired thickness
  12. With round cutter, cut rolls from dough ( It is best not to twist the cutter when cutting)
  13. Can make small petite rolls, rolling to 1/2 inch thickness
  14. Can make bigger round rolls, rolling to 1/2 inch thickness
  15. I prefer pocket-book rolls. I roll to 1/2 inch thickness and use a two-inch cutter. I cut the roll, dip in butter, and bring one half over to the other half's edge, then pinch down with two fingers. This creates a half-moon shape, a *pocket book* roll.
  16. Your choice on the roll's shape! They are wonderful anyway you cut them!
  17. After cutting the rolls, place in greased pans. (I use Crisco, not butter, butter browns too much.)
  18. Place the rolls fairly close to each other, but giving them room to rise
  19. Cover pan either with a clean kitchen towel, or wax paper
  20. Place in a warm place to rise until doubled, approximately 1-1/2 hours
  21. Brush tops *lightly* with melted butter
  22. Bake in a 375 or 400 degree oven until lightly browned, about 12 minutes
  23. * I prefer a floured wooden board, but can use wax paper, or other floured surface
  24. THESE ARE HEAVENLY, and our tradition at all family gatherings.
