Hearty Homemade Tomato Soup

Ingredients:

  • 1 (14 oz) can sweet potatoes
  • 1 (14 oz) can navy beans
  • 1 (10 oz) jar roasted red peppers
  • 1 (28 oz) can diced tomatoes
  • 1 (28 oz) can tomato sauce
  • 3 cups water
  • 1/4 cup onion flakes
  • 1 tbsp garlic
  • 1 tbsp basil
  • 1 tbsp oregano

Directions:

  1. Puree sweet potatoes, beans, peppers (including oil in jar) and tomatoes.
  2. Add puree to tomato sauce and water in crock, pot mix well.
  3. Add spices to taste.
  4. Turn on low and simmer 4-6 hours to let flavours set.
  5. Optional:.
  6. Add 1 cup cream to turn into a bisque.
