Healthy Nachos With Blue Corn Tortillas

Ingredients:

Directions:

  1. Pre-heat oven to 400º
  2. Spray a cookie sheet with vegetable oil spray (I use a silpat)
  3. Cut tortillas into 6 wedges each
  4. Arrange tortillas on cookie sheet in a single layer
  5. Lightly spray with more vegetable spray
  6. Sprinkle with sea salt
  7. Bake for about 5 or 6 minutes at 400º, on the middle rack, until crisp
  8. Layer on a glass plate: 9 tortillas pieces, half the cheese, half the chicken, and half the green onions, then add another layer of the same.
  9. Microwave for 60 to 90 seconds or until cheese is melted
  10. Top with salsa
  11. YUM!
