Healthy Nachos With Blue Corn Tortillas

These nachos fulfill the junk food need but are very healthy and quite delicious and filling. They can be vegan with you opt for no chicken. A great, guilt free, snack for only about 350 calories!
Ingredients:
3 blue corn tortilla (not the fried chips)
vegetable oil spray
sea salt
1/4 to 1/3 cup rice-based cheddar flavored cheese (or you can use real cheese, i just can't eat dairy these days), grated
2 sliced green onions
1/3 cup cooked shredded chicken breast or thigh (or opt for no chicken for vegan; quite delicious either way)
salsa to taste
Directions:
1. Pre-heat oven to 400º
2. spray a cookie sheet with vegetable oil spray (I use a silpat)
3. cut tortillas into 6 wedges each
4. arrange tortillas on cookie sheet in a single layer
5. lightly spray with more vegetable spray
6. sprinkle with sea salt
7. bake for about 5 or 6 minutes at 400º, on the middle rack, until crisp
8. layer on a glass plate: 9 tortillas pieces, half the cheese, half the chicken, and half the green onions, then add another layer of the same.
9. microwave for 60 to 90 seconds or until cheese is melted
10. top with salsa
11. YUM!
