Ham Stuffed Manicotti

Ingredients:

  • 1 lb dry pasta
  • 1 small onion
  • 1 small red pepper
  • 1/4 cup butter
  • 2 cups cooked ham
  • 6 tbsp olive oil
  • 6 tbsp flour
  • 3 cups lowfat milk

Directions:

  1. Cook noodles, drain and rinse in cool water and set asides
  2. Cook onion, peppers and garlic in 4 tbsp butter until tender. Add ham and set aside to cool for 10 minutes, then stir in 1/3 c parm
  3. In sauce pan cook 6 tbsp oil until foamy. Stir in flour and cook, stirring constantly until mix bubbles (about 3 min) Add milk and cook whisking constantly until thickened. Stir in cheese. Mix 1/4 of sauce with ham mix. Fill shells with the ham mix. Spread 1/2 cup sauce into greased pan. Add filled shells. Pour remaining sause over shells. Freeze.
  4. To serve, bake at 350 for 40-50 minutes.
