Ground Beef Potato And Red Chili Burritos

Ingredients:

Directions:

  1. Begin by heating a heavy skillet on low heat (preferably cast iron)
  2. Toast cumin in pan until you can smell the aromatics (be sure not to burn)
  3. Remove from pan and set aside
  4. Add vegetable oil to pan and when hot, add the cumin. when the cumin begins to bubble, add the onion and saute until translucent
  5. Add garlic and saute slightly being sure not to brown
  6. Add potatoes and saute until golden brown
  7. Add ground beef, crushed chili, and oregano and saute, breaking ground beef up in pan, but being sure to mash the potatoes
  8. When beef is cooked through add tomatoes and stir
  9. Let cook for an additional 2-3 minutes
  10. Add red chili sauce and season with salt and pepper to taste
  11. Let simmer uncovered for 15 minutes
  12. Warm tortillas in pan for 10 seconds per side til warm but not browned
  13. Add 1/6 of meat and potato mixture to burrito and top with shredded cheese.
  14. Fold in opposite sides over meat and potatoes and roll.
  15. Serve sour cream on the side (or you can add to each burrito and roll inside if preferred).
