Directions:

  1. Preheat grill pan over medium-high heat.
  2. Arrange zucchini in a single layer in a pan, grill 4 minutes, turning after 2 minutes.
  3. Combine tomato, mozzerella,basil, and garlic clove in a bowl.
  4. Add olive oil, and red wine vinegar to tomato mixture, stir gently.
  5. Divide zucchini evenly among 4 plates.
  6. Top zucchini with tomato mixture.
