Grilled Spiced Peaches

Ingredients:

  • 1/4 tsp cinnamon
  • 1/4 tsp rum extract
  • 2 tsp firmly packed brown sugar
  • 6 medium peaches

Directions:

  1. Prepare grill for a medium fire.In small bowl, combine margarine, sugar, vanilla, cinnamon, rum extract and allspice.Slice each peach in half vertically, removing pit. Place peach halves, cut-side up, in a double row in center of a double thickness of foil. With pastry brush, spread cut side of each peach half liberally with margarine mixture, letting some pool in the center of each half. Make packet by bringing 2 sides of foil up to meet in center and pressing edges together in two 1/2 folds.
  2. Then fold edges of each end together in two 1/2 folds. Allowing room for packet to expand, crimp edges together to seal. Grill until peaches are soft, 15-20 mins. Remove from grill and open packet carefully, as hot steam will escape. Place 2 halves on each of 6 dessert plates and serve.
