Grilled Grouper with Pineapple Curry Sauce

Ingredients:

Directions:

  1. In a bowl, combine the sauce, garlic and ginger; mix well.
  2. Remove 1/2 cup to a small bowl for basting; cover and refrigerate and marinate for 30 minutes.
  3. Pour remaining sauce mixture into a large re-sealable plastic bag; add grouper. Seal bag and turn to coat; refrigerate for up to 1 hour.
  4. Coat grill rack with nonstick cooking spray before starting the grill.
  5. Drain and discard marinade.
  6. Grill the marinated grouper, uncovered, over medium heat for 4 to 5 minutes on each side depending on thickness. Remember that cooking fish only requires 10 minutes per inch total cooking time.
  7. Plate the grouper and drizzle remaining sauce on fish.
