Grilled Baby Artichokes W/ Pepper Dip

Ingredients:

Directions:

  1. Prepare dip first by placing the peppers and garlic in food processor and process until very smooth.
  2. Add mayonnaise, mustard, 2 Tbl. hot sauce, and 1/2 teaspoons salt.
  3. Process until well blended.
  4. Cover and refrigerate at least 30 minutes.
  5. Then wash and trim outer leaves of artichokes.
  6. Cut 1/2 inch off top of artichokes, then cut in half lengthwise.
  7. Place chokes and 1 cup water and 1/4 teaspoons salt in microwave safe bowl.
  8. Cover and microwave on HIGH for 8 minutes until tender.
  9. Thread artichoke halves onto metal skewers.
  10. Prepare grill.
  11. Combine 1/4 cup hot sauce and butter in small bowl.
  12. Brush mixture over artichokes.
  13. Place artichokes on grill for 5 minutes, turning and basting often with sauce mixture.
  14. Serve artichokes with Roasted Red pepper dip.
