Greens With Mozzarella

Ingredients:

  • tbsp of olive oil
  • 5 or 6 large laves of greens (aka spring greens)
  • tbsp of water
  • garlic clove
  • half a ball of mozzarella with a little of the juice its in.

Directions:

  1. Whack the garlic clove with anything heavy to just crush it slightly.
  2. In a saucepan/wok heat the oil over a low to medium heat with the garlic clove in it for a couple of minutes.
  3. Wash the greens don't bother drying them.
  4. Roll the greens leaves up into a cigar shape and slice across them to make thin strips.
  5. Remove the garlic clove from the pan and add the greens, turn up the heat and stir fry them quickly, don't let them stick, keep stirring for 1 to 2 minutes or until they're wilted.
  6. Tip the greens and oil into a oven proof dish.
  7. Tear up the mozzarella and lay roughly on top of the greens pour over a little mozzarella liquid.
  8. Place in oven for 10 minutes at a high heat or grill until the mozzarella is bubbling.
  9. Serve
