Greek Style Asparagus With Olive Oil and Tomato

Ingredients:

Directions:

  1. Heat olive oil in a 3 quart pan and saute garlic and onion just until soft.
  2. Add the parsley and tomatoes and simmer for about 25 to 30 minutes, or until the tomatoes are very soft.
  3. Add salt and pepper to taste.
  4. Cut the cleaned asparagus into 1 inch pieces and add to the pot along with the white wine.
  5. Cook just until tender.
