Ingredients:

Directions:

  1. In a dutch oven, cook celery, onion and garlic in hot oil until tender.
  2. Add beef broth, water and rice.
  3. Bring to boiling; reduce heat.
  4. Simmer, covered, for 15 minutes.
  5. Add the torn spinach, beans, tomatoes, zucchini, thyme and pepper.
  6. Cook and stir until heated through.
  7. Top with feta cheese.
