Directions:

  1. Pre-heat oven to 275°C. Mix oats, coconut, almonds, oil, and honey in a big mixing bowl.
  2. Spread out onto a greased or non-stick cookie sheet. (I cover a cookie sheet with aluminum foil, then spray with low-fat cooking spray to keep the fat content low.) Put in oven for 45 minutes.
  3. Remove from oven and allow granola to cool. Stirring every few minutes to keep the granola from sticking.
  4. Add dried cranberries and walnuts (or any other dried fruit/nuts that you like) and store at room temperature.
