Grandma Mudge's Raisin Filled Cookies

Ingredients:

  • 2 1/2 cups raisins
  • 2 cups sugar
  • 2 tbsp flour
  • 1 cup hot water
  • 2 cups sugar
  • 1 tsp salt
  • 2 eggs
  • 1 tsp vanilla
  • 1 cup milk
  • 7 cups flour

Directions:

  1. FILLING: Grind raisins in food processor. Raisins should not become a paste. In a heavy saucepan, combine ground raisins, sugar, flour and water. Cook over medium heat, stirring until mixture thickens. It should not be runny. Set aside to cool.
  2. COOKIE DOUGH: In a large bowl, mix together in order. Roll out to 1/4-inch thickness. Cut into pairs. Place one part of pair on ungreased cookie sheet. Put 1 heaping teaspoon of filling in center. Top with other half. Seal edges by gently pressing together.
  3. Bake at 400F for 8-10 minutes.
