Grandfather's Soup

Ingredients:

  • 3 tbsp butter
  • 3 cups water
  • 1 pinch salt
  • 1/2 cup plain flour
  • 1/4 cup milk
  • 1 cup cream or 1 cup milk

Directions:

  1. Heat 2 tablespoons of the butter in a large pot over moderate heat and saute onion until tender but not brown (about 5 minutes).
  2. Add potatoes, water and salt and bring to a simmer.
  3. Meanwhile, mix the remaining butter, flour and enough milk to make a stiff dough.
  4. Drop pea size balls of the dough into the soup.
  5. Cook until potatoes are tender, about 8-10 minutes.
  6. Stir in the cream, milk or half and half.
  7. Return to simmer before serving.
