Grand Prize Rhubarb Muffins

Ingredients:

  • 2 cups flour
  • 3/4 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1/4 cup grapeseed oil ( or canola)
  • 2 tsp orange zest
  • 3/4 cup orange juice
  • 1 large egg
  • 1 1/3 cup chopped rhubarb

Directions:

  1. Preheat oven 350*
  2. Combine dry ingredients add fruit toss to coat
  3. Make a well in center
  4. In smaller bowl beat egg
  5. Add oil and juice beat well
  6. Pour into dry
  7. Mix just until dry is just moistened
  8. Spoon into sprayed or lined muffin cups
  9. Bake at 350* 25-30 minutes
