Ingredients:

Directions:

  1. Cut goose liver in 1/4 inch slices and sear in hot frying pan on the grill in batches,saving all the fat in the pan...when finished searing let liver rest to get to room temp,approx.1 hour
  2. In batches add liver and fat along with all other ingredients into food processor until you have a smooth creamy mousse
  3. Serve on top of white radish slices,crackers , or just put in bowl surrounded by white radish celery sticks and crackers
