'Good Morning' Bran Muffins

Ingredients:

Directions:

  1. Line a 12-cup muffin tin with paper liners or spray with non-stick cooking spray.
  2. Stir the cereal with the milk and let stand 5 minutes, then add the egg, butter, carrots, apple and raisins.
  3. In a separate large bowl, stir together all remaining ingredients. Make an well and add the wet cereal/fruit mixture, stirring until it is just moist.
  4. Spoon batter into prepared muffin tins and bake at 400F for 30-35 minutes or until a toothpick comes out clean.
  5. Cool in the pan for 5 minutes before turning out onto a rack to cool completely.
