Gochu Jang Stew

Ingredients:

  • 3 medium potatoes, diced into 3/4 inch pieces
  • 1 medium onion, chopped
  • 1/4 cup soy sauce
  • 4 -5 tbsp korean hot pepper paste, gochu jang, i use a cookie scoop, it makes it easier to come out, that stuff is sticky
  • 1/2 tsp sugar
  • 4 cups water

Directions:

  1. Place chicken, gochu jang, and soy sauce in large pot. Mix until soy sauce and gochu jang are combined and chicken is covered. Set aside to marinate while you chop vegetables.
  2. Chop vegetables.
  3. Place onions in pot and saute with chicken on medium heat until chicken is done on all sides.
  4. Pour water into pot, bring to boil then add carrots and potatoes. Return water to a boil then lower heat, cover, and let simmer stirring occasionally until vegetables are tender, about 30 minutes.
  5. Serve with hot rice :).
  6. If you want this more spicy you can add more gochu jang, or more soy sauce if it's not salty enough. You might not want it to have that slightly sweet flavor so you can leave out the sugar until the end and add it only if you think it needs it.
