Ingredients:

  1. Prep does not include chilling time
  2. Combine everything except breadcrumbs and crabmeat and breading in a big bowl
  3. Honestly easier to just squeeze it around with your hands until it's perfectly combined.
  4. Then gently fold in the bread crumbs and crab meat until well-mixed.
  5. If the mixture is too wet, add some more bread crumbs.
  6. If it's too dry to stick together, add another egg white.
  7. Shape the mixture into 8-10 cakes, pressing them firmly into shape.
  8. Then chill them in the fridge for 30 minutes while you prepare the breading, by combining in a bowl:
  9. For breading after chilling:
  10. Toss breading ingrdients together.
  11. When the crab cakes are chilled and a little firmer, set them gently into the breading, scoop some breading on top and gently press it into the cake.
  12. To cook, you have two options:
  13. Saute: Pour a half inch of canola oil into a skillet over medium-high heat.
  14. When the oil is hot, saute the crab cakes for 3 or 4 minutes on each side, then drain on paper towels.
  15. Oven fry: Preheat a foil-lined baking pan at 400F.
  16. When the pan is hot, remove it from the oven, add a few Tablespoons of canola oil and shake it around to evenly distribute it.
  17. Then set the cakes into the hot pan and put it back in the oven.
  18. Bake 8 minutes on each side, then drain on paper towels.
