Ingredients:

Directions:

  1. Day 1:Pare, remove seeds and cube in 1/4 cubes to fill an ice cream pail.
  2. Cover with 1 cup of vinigar mixed with 1 cup of water.
  3. Stir.
  4. Soak overnight.
  5. -stir.
  6. DAY 2 morning:Drain, rinse well,drain again.
  7. Squeese between tea towels.
  8. For every cup of Zucchini add 3/4 cup sugar.
  9. Mix well.
  10. Leave until it gets moist.
  11. Cook in a large flat pan (a roaster works well).
  12. Stir continuously and boil 15 minutes uncovered.
  13. THAT NIGHT: bring to a boil and cook uncovered for 10 minutes.
  14. DAY 3:Boil 10 minutes.
  15. Divide into three portions.
  16. Sprinkle each portion with a package of unsweetened kool-aid in a variety of colours (red, green, yellow).
  17. Cool separately.
  18. Let stand for several hours.
  19. Mix together and freeze in plastic containers.
  20. Prep time does not include standing time.
  21. Times and yield are appoximate.
