Ingredients:

Directions:

  1. Prepare gingerbread mix as directed EXCEPT replace half of the water called for with applesauce...homemade if you have some on hand
  2. Add orange oil and half the candied ginger.
  3. Bake as directed or spoon batter into Pyrex loaf pan and lower the oven temperature to 325 and bake about 50 minutes Check with tooth pick for doneness.
  4. Ice with either frosting and sprinkle zest and remaining candied ginger over the top.
