Ginger Beltane Cookies

Ingredients:

  • 1 cup packed brown sugar
  • 1 egg
  • 1/4 cup molasses
  • 2 cups flour
  • 1/2 tsp salt
  • 3 tsp cinnamon
  • 1 1/2 tsp ground cloves

Directions:

  1. Preheat oven to 350.
  2. Line a cookie sheet with parchment paper.
  3. Cream butter and sugars.
  4. Beat in molasses and egg.
  5. Combine all dry ingredients in seperate bowl.
  6. Stir all together.
  7. Add in chopped ginger.
  8. Roll into balls, or drop by tablespoonfull.
  9. Sprinkle with red colored sugar, nuts, chocolate chips, or granulated sugar.
  10. Bake for 10 to 12 minutes.
  11. Cool, and enjoy!
