Gina's Gin Fizz (Patrick and Gina Neely)

Ingredients:

  • 2 cups sugar
  • 1 cup water
  • 1 (5-inch) piece ginger, sliced
  • 1/4 cup gin
  • 2 tbsp lime juice

Directions:

  1. In a small saucepan, over medium heat, add the sugar, water and ginger. Stir until the sugar dissolves. Reduce the heat and simmer, stirring continuously, until thickened. Remove from the heat and set aside to cool.
  2. Pour the gin into a glass filled with ice. Add 1/4 cup of simple syrup and the lime juice. Top with soda water and serve.
