Giant Oatmeal Drop Cookies

Ingredients:

  • 1 cup packed dark brown sugar
  • 1 tbsp butter or 1 tbsp margarine, softened
  • 1/2 cup applesauce
  • 1 large egg
  • 1 1/2 cups flour
  • 1 1/2 cups rolled oats
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup raisins
  • 1/2 cup walnuts
  • 1 1/2 tsp vanilla
  • cooking spray

Directions:

  1. Preheat oven to 350°F Grease cookie sheets with cooking spray.
  2. Beat sugar and butter together until blended.
  3. Add applesauce and egg; beat well.
  4. Combine flour, oats, soda, cinnamon and salt in small bowl.
  5. Add flour mixture to sugar/butter mixture; beat until blended.
  6. Stir in raisins, walnuts and vanilla.
  7. Using 3 level tablespoon, drop dough 2- inches apart on prepared cookie sheets.
  8. Flatten slightly.
  9. Bake at 350°F for 10-15 minutes.
  10. Remove from pan; cool.
