Ingredients:

  • 3/4 cup butter
  • 1/2 cup sugar
  • 2 large eggs
  • 3 tbsp milk
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 1/4 cups flour, unbleached
  • 1/4 cup raisins , if desired
  • topping
  • 1/2 cup finely chopped almonds
  • 1/2 cup sugar
  • 1 tbsp brown sugar
  • 1 1/2 tsp flour

Directions:

  1. Cream butter and sugar.
  2. Beat in eggs, vanilla, and milk.
  3. Combine cinnamon, nutmeg, baking powder and flour.
  4. Add flour mixture to butter mixture.
  5. Gently fold in almonds, orange rind and raisins.
  6. Pour batter into greased muffin tins, filling half full.
  7. Topping:
  8. Mix topping ingredients together; sprinkle over unbaked muffins.
  9. Bake at 375ºF. for 25 to 30 minutes, or until browned.
