GAUCHO STYLE CHICKEN THIGHS

Ingredients:

  • 1/2 cup flat-leaf parsley loose
  • 1/2 cup cilantro loose
  • 3 clove garlic large
  • 1 cup olive oil
  • 1/4 cup malt vinegar
  • 12 piece chicken thighs
  • 12 slice bacon
  • 1/4 cup olive oil
  • 3 tbsp butter

Directions:

  1. Puree all ingredients, except the chicken thighs and bacon, and place in a zip lock bag. Add the chicken thighs, and marinate overnight flipping the bag a couple of times. Remove chicken thighs from marinade and drain. Wrap each thigh in a strip of bacon and place 3 chicken thighs on a metal skewer. Use the skewers to hold the ends of the bacon in place. 12 thighs = 4 skewers.
  2. Place the skewers on a broiler pan and roast at 400 degrees until bacon is crisp and chicken is cooked all the way through. Remove cooked chicken from skewers and serve on a platter. Top with Parsley Butter sauce.
